Stuffed Capsicum

It's capsicum with potatoes - sounds like a normal combo but since potato is stuffed inside the capsicum and cooked, the flavour is truly tempting and also looks good/attractive to the eyes. My son in law is not a capsicum fan, but he too liked this dish served with rotis.









Ingredients:

Capsicum : 2-3 small
Boiled potatoes : 2
Onion : 1 big
green chillies : 2
Ginger garlic paste : 1 tsp
Turmeric : 1/4 tsp
red chilli powder : 1 tsp
Jeera powder : 1/2 tsp
garam masala : 1/2 tsp
Salt to taste
Oil : 3-4 tbsp

Method:

1. Heat 2-3 tsp of oil in a pan, add ginger garlic paste, finely chopped onions, chopped green chillies.
2. When onions turn translucent, add the boiled and mashed potatoes, turmeric, red chilli powder, jeera powder, garam masala, salt and mix well and saute for 4-5 min.
3. Cut the top stem-like portion of capsicum, remove the seeds, apply little oil and salt inside and then stuff it with the potato mixture. (Note : dont stuff it too tight)
4. Shallow fry the stuffed capsicums in a pan with 2-3 tbsp oil till the capsicum skin wrinkles and changes the colour. (adjust oil quantity if required)
