Pudina thogayal

Lets see how to make Pudina thogayal. Pudina is mint. Thogayal is like thick spicy chutney which is to be mixed with hot cooked rice with 1 tsp of gingley oil or ghee. The best side dish for this is tomato pachadi/raita. Pudina is very good for health and it especially cools the body. The recipe for Pudina thogayal and tomato pachadi are as below.




Pudina thogayal

Ingredients:

Pudina leaves- 1 bundle
Mustard : 1/2 tsp
Asafoetida solid : small tamarind seed size
Salt : 3/4 - 1 tsp (or) as per taste
Urad dal : 1.5 tbsp
Red chilli : 2
Pepper : 7
Tamarind : 1/2 Amla size
Grated coconut : 1.5 tbsp
Oil : 2 tsp


Method for thogayal:

1. Take oil in a pan, add mustard, then asafoetida, red chilli, urad dal and pepper.
2. Fry the above till they turn golden brown and switch off the flame.
3. Now take the fried mixture, add curry leaves, salt, tamarind, grated coconut and grind it little coarsely.


Tomato Pachadi


Ingredients :

Oil : 2 tsp
Rai/mustard - 1/4th tsp
Urad dal - 3/4th to 1 tsp
Green chilli - 2 small
Tomato - 2 small
Salt
Curry leaves

Method :

1. Take oil in a pan.
2. Add mustard and let it crackle. Add urad dal, green chilli, curry leaves and fry well.
3. Add chopped tomatoes.
4. Sprinkle salt and mix well for 2-3 min on medium flame.
5. Switch off flame and allow it to cool.
6. Then add this mixture to 1 cup fresh curd (or more/less curd, as you like it).
7. Sprinkle asafoetida and mix well.
